Procedure Overview REAGEN™ Ascorbic Acid Assay Kit uses a specific visible, colorimetric reaction to detect ascorbic acid in food samples: ascorbic acid first reduces an electron carrier (PMS). This compound then reduces MTT to produce a colored MTT formazan product. This conversion, measured at 578 nm, is proportional to the level of ascorbic acids in the sample.
